From the Mayor’s Desk
Year 2006 is drawing to a close and it is a time of recollection and evaluation. Thank you for voting me this position and I feel I have made “a little” difference. Several projects have been completed and we have others under way which will add greatly to our town and the lives of you citizens. I thank the commissioners and other citizens who have worked with me; you can’t accomplish very much alone. I look forward to the coming year and seeing other advances come to be. I’ve appealed to you to take part in the town and I further request your voice in all matters; this is your Town and whatever goes on effects you. You can make a difference.
The holiday season is upon us and I would like to invite all of you to join me at the December Town meeting for an Open House celebration on:

Fire Department
“Celebrating Their 50th Anniversary”
In 1956 a group of citizens got together and expressed an interest in forming a fire department. The community at that time depended on Nashville Fire Department to render fire fighting service and the distance often was too far to save a structure. The men decided they could form a fire department and render service for Castalia with a much quicker response. Mr. Roy Pullen, department’s first president, donated a lot on main street and the first fire station was built. A used fire truck was purchased and equipped for about $3000.00; a few years later a second truck was added. In the 70’s a sub-station was built on Taylor’s Gin Rd. expanding the service rendered. Next a group of First Responders was added to the department. Shortly afterwards a small apartment for an EMS attendant and a garage to house an EMT vehicle was added to the Sub-Station. In the late 80’s a new Main Station was built and now operates on Lancaster Store Road. We salute our firemen for a good service performed; we bow our heads in memorial to the founders and other dedicated firemen who have passed. The first Fire Chief, Watson Manning, today resides at Carolina Beach, N. C. We thank Watson for his prior service and wish him the best.

Disaster Team News
The Disaster Team is happy to report the donation of 20 cots and 20 blankets by Nashville Emergency Services.
The Team thanks Lou Richardson, Brian Brantley and Scott Rogers for their effort and help in making this donation possible.
Our gratitude also goes out to Mrs. MaryLou Cook for her donation of a gas cooking range.
Disaster Team would like to remind you that items for the supply and food closet are still needed. Again we ask for donations of canned meat, fruit and vegetables. Please open your hearts and donate by dropping items off at the Castalia Town Hall
The Disaster Team is meeting on 12/9/06 at 8AM to build an enclosure in the Town Storage building to secure all items donated. Please consider helping in this endeavor. Each hand can make a difference.

This Issue’s Disaster Tip
Make up a personal hygiene kit for each member of your family. In a gallon size Zip Lock bag include the necessities such as toothbrush, toothpaste, soap, washcloth, shampoo, conditioner, razor, deodorant, Band-Aids, etc. Store the kits in a convenient location so in case of a disaster they can be grabbed and taken to a shelter for your use.
4th of July Committee News
The 4th of July Committee wishes to thank everyone in the community who supported the Brunswick Stew and BBQ Chicken Plate fundraisers. We have a good start but are a long way off to raise enough money to pay for the fireworks and all the events which make the 4th of July a memorable event for all who attend. Due to popular demand the committee is planning another BBQ Chicken Plate sale on December 2nd . We will start selling the plates at 11am and the price again will be $5.00 a plate. Another Brunswick Stew sale is planned for January 26th. A quart of stew will sell for $6.00 and the sale will start at 11am.
Raffle tickets are still being sold for $2.00 each to benefit the July 4th celebration. The winners will be drawn after the Town Board meeting on December 5th. You need not be present to win. Tickets may be purchased at the Town Hall or from any 4th of July Committee member.
Save your aluminum cans and drop them off at the Town Hall or the Rice residence at 9407 Main St. The cans are taken to the recycling center and the money received is added to the 4th of July account.

The committee is inviting everyone in the community to get involved and help plan our next 4th of July celebration. We need your ideas and help. We invite you to our next meeting on Tuesday December 12th at 7:00. The 4th of July celebration relies on volunteers. Please volunteer to make the Town’s Independence Day celebration a day to remember.

Citizen’s Corner
Continued from page 1
Collards
3 bunches of collars
1 medium onion (chopped)
3 beef bouillon cubes
2 ham hocks
1 pinch of red pepper flakes
Salt and pepper to taste
Place the ham hocks in a moderate amount of water and boil for 1 hour. Add bouillon cubes and let dissolve. Add washed and stemmed collards, onion, and seasonings. You may have to add water to cover collards(about 2 inches) so they can boil freely. Boil till tender(about 1 hr) Take collards up, drain and chop. Drain some broth from top of pot and pour on collards.

Holiday Relish
1 lb of raw cranberries, ground
2 apples, cord and finely chopped
Juice of 2 oranges (1 cup)
1 8oz can of crushed pineapple
1 cup chopped pecans
2 cups sugar
Combine all ingredients, mix well. Cover and refrigerate overnight. Yields about 2 qts. This is a good substitute for cranberry sauce.
This also makes a nice gift. Spoon relish into small jars, add a dressy top and use as a gift.

Coconut Pie
2 cups of sugar
3 or 4 eggs
1 cups of milk
stick of butter
1 tsp. vanilla
7 oz Angel Flake coconut
Mix sugar and eggs together, add milk, vanilla and melted butter. Add coconut and mix well. Pour into pie crusts. Cook 350 degrees for approximately 45 minutes.
Pie should be firm and golden brown. Makes 2 pies.
